Amaranth leaves and grains are packed with nutrition similar to that of quinoa. It offers a high quality protein, and the grains contain significant amounts of all essential amino acids, including lysine. It's naturally gluten free and is an excellent source of vitamins and minerals. Amaranth has many anti-cancer properties and anti-inflammatory properties. The leaves also contain rutin, a flavinoid that can strengthen capillary walls for varicose veins. You'll see it listed in many cereals and grain blends, as a gluten free alternative to wheat.
